4 | bone-in rib pork chops, 1 1/2 inches thick | ||

2 | teaspoons | crushed dried thyme | |

1 1/2 | teaspoons | ground black pepper | |

1/4 | teaspoon | salt | |

6 | Tablespoons | butter | |

3/4 | cup | brown sugar | |

4 | large apples, cored and cut into wedges | ||

Garnish with freshly chopped parsley | |||

1. Pat chops dry. In small bowl mix together thyme, pepper and salt; season both sides of chops; set aside.
2. In large heavy skillet melt the butter and sugar over medium high heat; add the apples and saute for 2 - 3 minutes on each side, until apples are barely fork tender and golden. Remove from heat and keep warm.
3. In same skillet over medium-high heat, add a little olive oil. Add chops and brown on one side, about 4 minutes; turn and brown other side, 4 minutes more. Keep turning chops every couple of minutes until just done (internal temperature will reach 150 degrees F). Total cooking time for chops will be around 8 to 12 minutes.
4. Serve chops with warm caramelized apples and sprinkle with fresh parsley.
